The Groen BPP-30GA is a 30-gallon, gas-heated Ergonomic Tilting Braising Pan (often called a tilting skillet). It is almost identical to the BPP-30G, but the "A" at the end signifies that it is a high-altitude model, specifically configured or jetted for efficient combustion at elevations above 2,000 feet. In a professional kitchen, this is a "do-it-all" workhorse that replaces several pieces of equipment by acting as a griddle, fry pan, steamer, and stockpot. Key Performance Specs 30-Gallon Capacity: Large enough to cook massive batches of chili, stew, or taco meat, while the 38-inch rim height makes it easier for cooks to reach in and stir. 104,000 BTU/hr: A high-output gas burner system designed to heat the pan quickly and recover temperature fast when cold food is added. Power Tilt: The "P" indicates it uses an electric motor to tilt the pan. This allows for precise, effortless pouring of liquids or cleaning water into a floor drain. Technical Construction Clad Cooking Surface: The cooking plate is a 5/8-inch thick piece of stainless steel bonded to a heavy aluminum core. This design prevents "hot spots" and ensures even browning across the entire surface. Coved Corners: The interior corners are rounded (coved) to prevent food from getting stuck, making it much easier to sanitize than a square-cornered pan. Water Resistance: The controls are housed in an IPX6 rated enclosure, so it can be safely sprayed down with a hose during kitchen cleanup. Installation Requirements Gas Connection: Requires a 1/2-inch NPT gas line. Electrical: Even though it’s a gas unit, it needs a 115V outlet to power the electronic ignition and the power-tilt motor. Water Supply: It usually features a faucet bracket on the back for a spray hose or fill faucet to easily add water for soups or cleaning.
The Groen BPP-30G is a commercial gas-heated tilting braising pan, also known as a tilting skillet. It is essentially the "Swiss Army Knife" of a professional kitchen because it can perform the work of a griddle, fry pan, oven, stockpot, bain-marie, and food warmer all in one unit. Key Capabilities 30-Gallon Capacity: The "30" indicates it can hold up to 30 gallons (114 liters) of product. Cooking Versatility: It is designed for braising, sautéing, pan-frying, steaming, or simmering large batches of food like stews, taco meat, or scrambled eggs. Power Tilt: The "BPP" prefix stands for Power Tilt. Unlike the "BPM" (Manual) models that require a hand-crank, this unit uses an electric motor to tilt the pan body forward for easy pouring and cleaning. Technical Specifications Heat Source: It is gas-operated (Natural Gas or Liquid Propane) with a high output of 104,000 BTU/hr. Construction: The pan is made of heavy-duty 304 stainless steel with a 5/8-inch thick clad plate for the cooking surface. This thick base ensures even heat distribution and prevents warping. Temperature Range: Thermostatically controlled from 175°F to 400°F. Electrical: Although it burns gas for heat, it requires a 115V electrical connection to power the electronic ignition, digital controls, and the tilting motor. Design Features Ergonomics: Part of Groen's "Eclipse" or "Ergonomic" line, designed with a lower rim height (38") to make it easier for staff to see into the pan and stir the contents. IPX6 Water Rating: The controls are housed in a water-resistant enclosure, meaning it can handle the heavy spray-down cleaning common in commercial kitchens. Safety: It features a high-limit thermostat and an automatic shut-off that kills the burners whenever the pan is tilted.
