The Crescor 1290-005 is a non-insulated, mobile Proofer and Hot Transport Cabinet. It is a dual-purpose unit designed to either proof dough (providing low heat and high humidity) or hold prepared foods at serving temperatures. Key Specifications Capacity: It features universal wire angles that can hold various pan sizes. It typically accommodates 11 sets of universal angles adjustable on 1-1/2" centers. Common Pan Fits: 18" x 26" (Bun pans), 12" x 20" (Steam table pans), and 14" x 18" (Service trays). Heating System: Total Wattage: 2000 Watts. Holding Mode: Operates at 2000 Watts to hold food at temperatures up to 180°F (82°C). Proofing Mode: Operates at 960 Watts for temperatures between 80°F and 95°F, maintaining approximately 95% relative humidity. Electrical Requirements: Voltage: 120 Volts, 60 Hz, Single Phase. Amperage: 16.7 Amps (requires a 20 Amp service/outlet). Cord: Usually comes with a permanent 6-foot cord and a NEMA 5-20P plug. Construction & Design Material: Built from non-corrosive, high-tensile aluminum for strength and lightweight mobility. Door: Features a field-reversible Lexan door, which is transparent so you can check on dough rise or food levels without opening the cabinet and losing heat. Mobility: Equipped with 5-inch heavy-duty swivel casters, two of which have brakes. Controls: The control panel is slanted for easy reading and is accessible without opening the door. The entire power assembly is often designed to be removable for easier cleaning and maintenance. Humidity: Includes a 3-1/2 quart water pan with its own 960-watt heater specifically for the proofing cycle. Primary Uses Bakeries: Proofing large quantities of dough in a controlled environment. Catering/Schools: Transporting hot food from a central kitchen to a serving area while maintaining food-safe temperatures.

The Cres Cor H137UA12B is a full-height, insulated mobile heated holding cabinet. It is designed to keep prepared foods at precise serving temperatures, making it a staple for catering, banquet halls, and high-volume restaurants. The "UA12" in the model name indicates it features 12 sets of universal angles for holding a wide variety of pan sizes. Technical Specifications Dimensions: 28-3/4" W x 32-3/4" D x 73" H (including 5" casters). Weight: Approximately 255 lbs. Temperature Range: Heats up to 200°F (93°C). Pan Capacity: 12 sets of adjustable universal angles. It can hold: (12) 18" x 26" Bun Pans (24) 12" x 20" Steam Table Pans Various other sizes like 14" x 18" service trays. Power Requirements Wattage: 2000 Watts. Voltage: 120 Volts, 60 Hz, Single Phase. Amperage: 16.7 Amps. Note: Because this pulls over 15 Amps, it requires a NEMA 5-20P plug (one blade is horizontal) and must be plugged into a 20-amp circuit. Key Features Full Insulation: Unlike the non-insulated 1290 series, this model is fully insulated, which provides excellent heat retention, lower energy costs, and a "cool-to-the-touch" exterior. Dutch Doors: It features two half-size doors (Dutch doors). This allows you to open only the top or bottom section at a time, significantly reducing heat loss when loading or unloading food. Universal Angles: The internal racks are "universal," meaning they can be adjusted on 1-1/2" centers to fit almost any commercial pan width or depth. Top-Mounted Power Unit: The heating assembly is located at the top. This is a major advantage for cleaning because it allows the interior floor to be smooth and "hosed out" (after removing the power head) without damaging electrical components. Durability: Constructed from non-corrosive, hi-tensile aluminum with a one-piece extended base to protect the cabinet body during transport.
