:
The Wittco Model 1200-IS is a high-capacity, commercial Cook and Hold Oven. It is a specialized piece of kitchen equipment designed to slow-roast food at precise temperatures and then automatically switch to a holding mode to maintain quality and food safety. Core Functions Slow Roasting: It cooks at lower temperatures than a standard convection oven (typically up to 350°F). This process reduces meat shrinkage and preserves natural juices, which is ideal for large proteins like prime rib, brisket, or turkeys. Holding: Once the cook cycle is complete, the unit drops to a holding temperature (typically up to 250°F) to keep the food at an ideal serving temperature for hours without overcooking it. Rethermalizing: It can also be used to safely reheat chilled products back to serving temperature. Key Specifications Design: A full-height, mobile cabinet made of stainless steel with heavy-duty casters for easy transport. Capacity: It is designed to hold approximately 16 full-size sheet pans (18" \times 26") or 32 full-size hotel pans. Airflow: It uses a low-velocity fan system. This provides even heat distribution while preventing the "windburn" or excessive drying that can happen in high-speed convection ovens. Controls: The "IS" series typically features electronic controls that allow you to program specific cook times and temperatures.

The Vulcan VCH16 is a professional-grade heated holding cabinet, specifically designed for high-volume commercial kitchens. Unlike a standard oven or a simple warming rack, this unit is engineered to maintain precise temperatures and humidity levels to keep food "kitchen-fresh" for extended periods without drying it out or continuing to cook it. Key Specifications Capacity: The "16" in the model name refers to its capacity. It can hold up to 16 full-size sheet pans (18" \times 26") or 32 full-size hotel pans (12" \times 20" \times 2.5"). Heating System: It uses a "gentle" heating method—often involving fan-forced air—to ensure uniform temperatures from the top to the bottom of the cabinet. Material: It features a heavy-duty stainless steel interior and exterior, built to withstand the rigors of a busy commercial environment. Mobility: These units are typically mounted on 5-inch heavy-duty casters (wheels), allowing them to be moved from the prep area to the serving line or onto a catering truck. Primary Features Digital Controls: It allows for precise temperature management, usually ranging from 80°F to 195°F. Insulation: The cabinet is fully insulated (usually with foamed-in-place insulation) to ensure heat retention and energy efficiency, keeping the exterior cool to the touch. Field Reversible Doors: The doors can be adjusted to swing open from either the left or the right, depending on your kitchen layout.
